To be very honest, what I liked most during my visit (had the set lunch), other than the classy design/architecture of the place, was the aromatic ghee rice and other than that, I’m struggling to see the value proposition behind such simple (in place of another word that starts with ‘b’) Eurasian cooking costing 60-70 bucks for a lunch (kueh platter ordered separately.) The pork and beef rissoles in particular really tasted like a whole lot of nothing, fried in some weird breadcrumb mix that didn’t provide a satisfying shell crunch either. Brinjal and chicken vindaloo just tasted like what you’d expect, nothing extraordinary.

We had a wonderful dining experience at Gilmore & Damian D’Silva. The elegant ambience, with its crisp table settings and warm lighting, created the perfect setting for the evening. The food was a beautiful fusion of Chinese, Eurasian, and Peranakan flavours, reflecting the owner’s rich heritage and culinary expertise. A special mention goes to Andrew, our humble and attentive server. His thoughtful recommendations, knowledge of the menu, and always attentive, ensuring our wine glasses were topped up- yet respectful in giving us the space and privacy to enjoy our conversation. A lovely evening where the food, service, and ambience all worked their magic. Thank you, Andrew and the team!

Nestled within the former Supreme Court, this bespoke restaurant pays homage to Eurasian cuisine and is a fitting tribute to Singapore’s rich culinary heritage, evoking fond memories of our nation’s past and the enduring gastronomic legacy of our forefathers’ table. The menu is carefully curated to reflect traditional recipes that have handed down through generations and flavours and spices so carefully balanced to stir ,evoke and immerse one in a unforgettable culinary experience . From the spicy tinge of sweetness of the Chorka Tambrinhyu , the tamarind squid dish to the savoury slow braised tender beef cheek and crisp fried outer crust of the yam cum sweet potato dish , each individual dish is an epicurean delight. A true feast for the senses, as the sauces never seemed to overpower the dishes; rather, they enhanced and perfectly complemented each artisanal creation, be it meat, seafood, or vegetable. Indeed , I was particularly impressed by the Baca Assam dish . The melange of Asian spices with the tamarind sauce truly elevated the beef cheek dish to the next level . Apart from the mains , the meal ended on a high note with the baked tapioca cake dessert accompanied by the durian ice cream. Remarkably refined and free from the fruit’s customary pungency, the ice cream was smooth, velvety, and indulgently rich. Paired with the warm tapioca cake, it formed a harmonious finale that was both surprising and thoroughly memorable. It is within these historic walls of the old Supreme Court that Gilmore and Damian D’Silva finds itself uniquely positioned at the the crossroads of Singapore’s history and culinary heritage , both seamlessly intertwined ,successfully creating a compelling narrative of our Nation’s evolution and honouring at the same time our cultural identity .

10/5/26, son book a table for mother day. The restaurant look pleasure small quiet but we only managed to get a table just outside the main dining room, would have prefer inside instead. The food come in small portion, maybe that what most restaurant do nowadays as we have been to a few up market that serve small portion. As a Chinese SG we r used to have larger portion plentiful so unless u order more dishes otherwise u leave still hungry like us. Service is good but we feel server don’t have to explain the food the menu tell the story plus server using her hand to point, to us pointing at the food is rude. Maybe take a food marker will be more presentable. One thing that is very reasonable is bringing your own champagne or wines the restaurant charge only $5/ for glass would have prefer a champagne glass instead of wines. Anyway if u r ok with small portion, rich food and reasonable quiet place this is recommend.

May 2026 Back here with sis and her husband to celebrate their upcoming wedding anni and it was a good evening. The staff, especially Joyce, were warm and hospitable and helped make the dinner an enjoyable one. We tried new dishes like the braised beef cheek, fried yam with Chinese ham and pork and beef rissoles and they were tasty. The star of the evening was still the kedongdong salad, which was light and refreshing. April 2026 We dined here with friends and it was a good experience. In fact, this was our friends' third time dining here in a month. Chef Damien and Chef Alan were kind enough to speak with us at the table, and Chef Alan made several good recommendations, including the Red Emperor fish which was not on the menu, and which had fresh and firm fish. We also enjoyed dishes like kadongdong salad, macaroni prawns, ngoh hiang and prawns in a green curry. The vindaloo chicken was okay, with tender pieces, but I did wish there was more spice. The belachan did pack lots of heat and was freshly made too. Dessert was pretty good as well. The kadongdong sorbet was a palate cleanser, and we also enjoyed the heritage kuehs like salat and kosui, as well as the pulut hitam. The prata-like red bean pancake was nice, and the filling was super smooth yet contrasting with the sliced almonds. The decor was very Colonial and elegant (elevated dining) and we especially loved the glass lamps. Staff were friendly and helpful.

Lovely dinner at Gilmore & Damian d Silva, tucked along the Supreme Court wing of the National Gallery. The restaurant is the brainchild of its namesake chef, Damien d’Silva—widely regarded as a patriarch of Peranakan and Eurasian cuisine here—while paying tribute to his grandfather, who once served as a caretaker of the former Supreme Court, adding a quiet sense of history and personal heritage to the space. The food is where the experience shines, presenting a deeply soulful, almost nostalgic expression of heritage cooking. The Teochew ngoh hiang arrives crisp on the outside with a savoury, five-spice-laced filling, each bite releasing fragrant juices. The kedondong salad cuts through with bright acidity and a gentle funk, awakening the palate with its interplay of sweet, sour, and spice. A standout is the sambal buah keluak with pork belly—rich, earthy, and unapologetically bold—where the nutty depth of the keluak melds seamlessly with the tender, fatty pork. This is best enjoyed with the aromatic ghee rice, each grain perfumed and lightly buttery, acting as the perfect canvas to soak up the robust sauces. The meal crescendos with an exquisite selection of nyonya kueh—delicate, lovingly crafted, and beautifully balanced in sweetness—an essential finale that lingers long after the last bite. Service remains attentive and gracious, led by the ever-friendly Iain Goh, with BYO wine at just $5 per glass sealing the deal on exceptional value at one of the most iconic building in Singapore’s history.

I had a really positive experience with Gilmore and Damian Silva. From the moment I arrived, they set a welcoming and professional tone—friendly without being overbearing, and clearly passionate about what they do. Service was attentive and well-paced, and they took the time to explain dishes and make thoughtful recommendations, which added a personal touch to the whole experience. The food itself was genuinely impressive. You can tell there’s care and intention behind each dish, both in presentation and flavour. Their signature mains were a highlight—rich, well-balanced, and beautifully plated. One standout was their slow-cooked meat dish, which was incredibly tender and packed with deep, savoury flavour, paired with sides that complemented it perfectly without overpowering it. Another memorable dish featured fresh, vibrant ingredients with a great contrast of textures—crisp, creamy, and just the right amount of acidity to bring everything together. Even the smaller plates and starters were thoughtfully executed. Nothing felt like an afterthought, and there was a consistent standard across the menu. Desserts were also worth saving room for—refined, not overly sweet, and a great way to round off the meal. What stood out most overall was their attention to detail and willingness to go the extra mile to make sure everything felt just right. All in all, great food, warm hospitality, and a well-curated dining experience.

Gilmore & Damien D’Silva @National Gallery It was on my radar for some time, luck had it that three wonderful colleagues from a past & active gourmet live invited me for this experience! The location of this restaurant has seen various concept changes over the years, most recently Japanese, prior that Indian, we hope that this time the Gilmore concept is there to stay! Simply put, it was super nice! Damien who is part of the culinary scene for many years may have finally found his calling. Superbly set up, this restaurant has true potential! Food was super good, service attentive, a perfect Lunch Location! Chef Damien has evolved, not just a Peranakan fare, but as he calls it Singaporean! We chose a combination of various lunch options and had a wonderful variety of dishes giving us an amazing overview of his complete culinary skills which seem to get only better with age! The Ngio Hiang, (usually only available at dinner) was well crafted and is a must, The Rissole’s are a must try, albeit a tad on the dry side but the flavours just perfect, The Prawn Macaroni Toast rather unique, gave a wonderful start to the degustation! Outstanding was that portion sizes were manageable giving us a wide variety of choices making this the perfect place for a communal / sharing experience ! We enjoyed the Brinjal (spicy & sour eggplants) as well as the Bredu Kachang (stirfried long beans & pork) The tamarind squid & the green chili prawn sambal, were great dishes, yet the claypot har cheong pork belly, was truly outstanding! Bring it on chef, perfect! Loved the Baca Assam (slow braised beef cheek with tamarind) perfectly cooked with balanced flavours, highly recommended! All accompanied by stirfried Vegetables & Ghee Rice! For dessert we had a wonderful selection of Singapore Heritage Kueh’s , Espresso was perfect! One can only recommend this restaurant for a truly satisfying Singapore Gastronomic Experience! Satisfaction guaranteed! #gourmet #sgfoodporn #sgfoodstagr
