Sin Heng Kee porridge is famous, serving to what I feel was a Hainanese Cantonese hybrid porridge. It was not as thick or creamy as Cantonese porridge, but still thicker and less grainy than Hainanese porridge. I ordered the sliced pork porridge.
Sadly, this is not a compliment. The porridge stock was flavourful, but the porridge lacks the creaminess of Cantonese porridge and the drinkable-ness of Hainanese porridge. It became watery halfway through the bowl.
The porridge flavour felt one dimensional. It was nice at first, served extremely hot, but in this particular sliced pork bowl, there wasn't anything else to offer change to the flavour profile of the bowl. Yes, the pork provided added sweetness and savouriness to the otherwise boring bowl, but I felt it was sliced too big and the porridge too hot to be able to eat them together in one mouth. I personally did not like the marination of the pork, as it was marinated with flour. It tasted soft, a little slimy. Some slices clumped and sticked together.
Basically, it was a basic bowl which is tasty at the start, but finishing the bowl becomes a chore towards the end. I felt the bowl needed some variations in the ingredients or pockets of surprise inside, like 东菜.
Nobody will complain a food serving temperature being hot, but to me, the overly hot porridge was a detriment. Raw egg solidifies too quickly and it hampers my eating speed.
