Ng Kuan Chilli Pan Mee Thomson

Located among the shophouses in Upper Thomson area, this eatery can get crowded so best to come on weekday. I had the fish cutlet ban mian which comes with the signature dry noodles w chili and fried fish cutlets separately. The noodle was topped with lots of fried crunchy ikan bilis and fried shallots with a soft-boiled egg. You're to mix the chili sauce with the egg and all the fried stuffs. Not for all palate, I think. I'll prefer abit of sauce to bring it all together. But that's my personal preference. My hubby loves such dry version.

Was really excited to try this non saucey style of ban mian given the rave reviews. The good: The noodles was quite unique in that it is not the usual thickness/ slightly thinner and is well coated by the lard(?) and the chilli 🌶️ rly has a kick and do not be deceived by the small quantity it can really burn!! 🔥 the egg was also of the right texture/ explosiveness The bad: VERY disappointed by the ikan bilis!! Which is quite a core actor in a “simple” basic bowl for dry ban mian with minced meat. It is like the second lead actor in this dish but it’s (1) on the hard side and (2) not crispy…. Tried to give feedback to the staff but there was no action taken or response prolly also cos all the ikan bilis prolly taste the same or like have the same issue. So it’s not like they could replace it. The third actor the fried shallots got some burnt also…. Likely re fried or sth…. Don’t think I’ll give this outlet a chance again….. there are better ones out there. But it’s an ok environment for a fuss free meal

omg the fried shallots and garlic really elevate the dish i prefer this chilli style to the dark sauce pan mee!!! the ikan bilis is battered and crispy! i loved the milo too cus it was damn gaoooo

Nice pan mee egg fried onion favour and crunchiness from the ikan billis except the chilli even when i ask for less spicy was still pretty spicy and also the soup can be hotter, almost cold already.

Dry ban mian was average at best, really dry as there was no sauce apart from the chilli oil. Even the ikan bilis was dry and not crispy enough, the fried toppings didn’t blend well with the noodles. Soup wasn’t very flavourful. Highlight of the meal was the fried enoki mushrooms, though it’s a bit on the oily and heavy side.

Affordable and tasty chilli pan mee, but there was a strand of hair my spinach soup, and also a hard piece of cartilage/bone in my minced pork. Food taste wise is five stars, noodles well cooked and springy, ikan bilis and garlic chips nicely crisped, egg yolk a pretty orange hue and just runny enough to be mixed into noodles. Didn't like the fried shallots, not crunchy. Chilli packs a punch, ask for separate chilli if you can't take spicy. Spinach soup has a half century egg as well as a normal egg half cooked, soup tastes better than the small bowl of soup that the dry pan mee comes with, small bowl is much more peppery. Portion of spinach veg given is enough for 4 to 6 pax to share. Portion of noodles is for a normal eater. Fried chicken cutlet tastes quite junky but some might enjoy it a lot. Place is air conditioned, certain seats in direct air flow can be uncomfortable. Floor of my seat had spilled chilli and was slippery, quite dangerous. Total bill sgd 22.40 for 2 bowls of dry pan mee and 1 large bowl of spinach soup. Will recommend trying this place if in vicinity and craving chewy springy noodles.

Update: Taste may not be consistent. 2nd trip down and taste was so so. Cutlet was too oily. Takeaway is a no no. 4 ⭐️ only for the chilli ban mian eaten there. —————————— The signature Dry Ban Mian which is the best seller here is excellent! The highlights are definitely the fried garlic and shallots, which add an amazing crunch and flavor to the dish. The space is comfortable and clean and service is fine. Will be back to try other dishes.
