Hup Seng Duck Rice at Sin Ming Drive proved well worth the trip, though arriving early is highly recommended if you'd prefer to avoid a lengthy queue.
We reached at 10:45am hoping to stay ahead of the crowd, and it paid off. By 11:15am, the queue had already grown to around 20 people.
We ordered the duck for two, along with a small bowl of salted vegetable and duck soup to share.
The duck was sliced to a thickness that struck a pleasing balance between tenderness and texture. Thick enough to provide a satisfying bite, yet not so thick that it became chewy. The braising sauce had penetrated the meat well, imparting a savoury sweetness that was further enhanced by an extra drizzle just before serving. The duck itself was tender and flavourful, with a clean, distinct duck taste. The skin provided a gentle richness without being overly fatty, complementing the meat nicely.
The rice deserves mention as well. Though seemingly simple, it was cooked with care. The grains were well-defined with a slight chew to them, providing an excellent canvas for the braising gravy. Together, they were a satisfying combination.
The standout, however, was the salted vegetable and duck soup. Unlike many versions that lean heavily on the salty side, this one was remarkably balanced. The salted vegetables appeared to have been properly prepared to temper their salinity, allowing the duck flavour to come through clearly. A measured dose of pepper added warmth and complexity without overwhelming everything else. The result was a deeply comforting soup with layers of savoury, peppery and duck-rich flavours.
I'll certainly be returning, though likely on a weekday morning before 10:30am. Given the stall's popularity and relatively short operating hours, arriving late may mean missing out altogether.
