During my previous visit to Redhill Market for Redhill Pork Porridge (红山猪肉粥), I had already noticed this Kway Chap stall and made a mental note to return. What caught my attention was the impressive number of Michelin Bib Gourmand stickers displayed proudly on the stall front, which naturally sparked my curiosity. It was only a matter of time before I came back to give their Kway Chap a try. I ordered the 1-pax portion, which came with the kway for $4.50, and it was a decent and satisfying bowl. The braised innards were well cleaned, with no gamey smell, which is something I particularly appreciate as it reflects careful preparation. The kway was smooth and paired nicely with the braising sauce. Personally, I prefer a stronger and more robust braised flavour, so I would have liked the gravy to be slightly more intense. That said, their version is already good by most standards and easy to enjoy. There are definitely stronger-tasting ones elsewhere, but what stood out to me here was the cleanliness and execution, which made the dish enjoyable in its own way. Overall, this Michelin Bib Gourmand Kway Chap at Redhill Market delivered a solid and comforting bowl at an affordable price. While the braising flavours leaned towards the lighter side for my personal preference, the innards were exceptionally clean and well prepared, which made the dish enjoyable without any unpleasant gamey taste. The smooth kway and balanced execution showed the experience behind the stall. It may not be my top favourite, but it is still a dependable option, and I would not mind returning again when I am in the area.

$4 for 1 pax portion is really affordable Another $0.50 for the kway The kway is soft, soup is flavourful. Add the oil shallots for more flavour I like the pork belly meat best. The lean meat also melts without much chewing. The intestine is clean and tender Pig skin is one of the thickest I tried so far Though thick yet its still very tender and soft which gives it nice texture when chewing The sauce is the watery kind which I find a bit bland. So the egg, tau pok taste a bit too bland as well. Prefer the thick and savoury kind of sauce Will visit again but probably only order the pork belly and intestine

Shi Le Yuan/实叻園) at Redhill Market has been in the Michelin Guide since 2017, & is now a Michelin Bib Gourmand stall, best known for its old school kway chap. I ordered a pick & mix plate with pig stomach/猪肚, big intestine head/大肠头, powder intestine/粉肠, plus a braised egg/卤蛋, together with a bowl of kway, & it came up to S$15.50. The innards were very well cleaned, with no funky smell or unpleasant aftertaste at all. Texture wise, everything was soft, tender, & easy to eat. Unlike some stalls that go for a thicker, darker, saltier braising sauce with heavier flavours, Shi Le Yuan’s version is lighter in colour, cleaner tasting, & less salty - somehow it even feels a bit healthier. One interesting thing is that customers are asked to top up the fried shallots & shallot oil themselves, so you can adjust it to your own liking. Queue was moderate during peak hours.

Individual set meal $4.50! Economical! Good value for money! Affordable and delicious food. It's very popular here! Long queues every day! Popular kueychap store over here! Always long queue, cheap and good! 8.50 cents a bowl of kuey! A set is $4.50! How to complain??? Eat lah!!! Tomorrow then diet! Still KPKB! Lighting strikes you a couple of times loh!!! CDC vouchers accepted too! 😅🥰 Thanks PMwong! Proud to be a Singaporean!!! Hooya! Eat your fill today! You'll have energy to diet tomorrow! One of my favourite kway chap stalls 👍👍 The queue speaks for itself and the regular customers know exactly how to order the food. I have not been here for years and so glad that the food still tastes as good as before. A bit expensive ($9.50) for the two pax portions plus three bowls of kway. But I don't mind paying for it as I like the taste of the food and the kway. They have adjusted their operations time, so I need to plan my next visit mindfully.

The braised pork cuts were generous, the cartilaginous skin was expertly prepared without the fatty layer. We would like the dipping chilli sauce to be more sour; at its current recipe, it offered enough balance to not overpower the braise

First time trying at this kway chap stall. Since it has labelled of Michelin *. Too bad that the integrity of the owner is not having. For my case, the usual request no lean meat, no pig skin & no egg. This kind of portion that the boss still so daring to serve it out. Even his son was shocked in quiet. No justice at all. Luckily thks to dbs paylah for the cash rebate. No more going back to this stall ever! 😤
