This is one of those store that i patronized after seeing FB video reviews. Went to the store on a Sunday morning for brunch and was greeted by a long queue of 18 paxs in front of me. Managed to get my food after 40 mins but absolutely worth the time and effort.
The broth of their signature Soup Sheng Mian was slight cloudy yet deeply flavourful, carrying a natural sweetness from pork bones and other ingredients, balanced with hints of fried shallots and white pepper.
The thin yellow egg noodles were perfectly cooked, springy and smooth, soaking up the savoury soup without losing their bite. Topped with tender pork slices, minced pork, liver, fish cake, chewy fish balls, cut lettuce, chopped scallions, crispy pork lards and a raw egg. It’s a melody of goodness in a bowl, satisfying and heartwarming 👍🏻
Their dry version of the Sheng Mian was also delicious. The Yellow Egg Noodles were springy with a satisfying bite, perfectly tossed in an umami-rich soy-based sauce that's neither too salty nor oily. The crispy pork lards added crunch and depth, while the mild spicy chilli paste provided hint of spiciness.
Toppings on the dry noodles were simpler, only cut lettuce, bean sprouts and fried shallots, while minced pork, slice pork, liver, fish balls and an egg in bowl of soup on the side. A truely satisfying and addictive dish!
Personally, what sets their signature sheng mian dishes apart from others, is how they kept the basics of a humble noodle dish (flavours & texture), slightly elevated it with current ingredients and cooking techniques, and turn it into something memorable.
