We had the absolute pleasure of celebrating my husbands 40th birthday at Locavore NXT, and from start to finish it was one of the most incredible dining experiences we've ever had. Every aspect was exceptional—the food, the venue, the service, the atmosphere, and the accommodation. We stayed in the beautiful wood cabin on site, which made the experience even more special and allowed us to fully immerse ourselves in everything Locavore NXT has to offer. One of the highlights was moving through different areas of the venue as the evening progressed, with different courses served in unique locations. We began by watching the sunset over the rice fields before continuing through the stunning restaurant. The architecture and design of the entire venue are absolutely incredible, and every space had its own atmosphere and added something different to the experience. The tasting menu was made up of lots of beautifully crafted small courses, which meant we were able to try such a huge variety of flavours, ingredients and dishes throughout the evening. We also chose the wine pairing and cocktail pairing, both of which were fantastic and thoughtfully matched with the food. After dinner, we continued the celebrations at Night Rooster cocktail bar in Ubud for a post-dinner drink, which was the perfect way to finish husband 40th birthday night. Because we were staying on site, the experience continued the following morning with a private breakfast followed by a behind-the-scenes tour of the restaurant. It was such a great addition to the stay and gave us an even greater appreciation for the thought, creativity and passion that goes into everything they do. Communication before our visit was incredibly easy and prompt, and every member of staff we encountered was friendly, knowledgeable and genuinely passionate about what they do. It really felt as though the staff loved where they worked, and that enthusiasm came through in the service and the whole experience. Locavore NXT is so much more than just a restaurant. The combination of the food, architecture, setting, service, accommodation and the way the entire evening unfolds makes it a truly unique experience. It was an incredibly memorable way to celebrate a 40th birthday and easily one of the highlights of our time in Bali. We couldn't recommend it highly enough. Locavore NXT is, without question, one of the most memorable restaurants I’ve visited in recent years. Alongside Mirazur, it’s one of the few dining experiences that has truly stayed with me long after the meal. Set in the peaceful countryside of Ubud, the restaurant occupies a beautifully designed space where the experience begins the moment you arrive. This is far more than a meal—it’s a carefully choreographed sensory journey. The experience started with the aperitif and amuse-bouches overlooking endless green rice fields, immediately setting a calm and immersive tone. Every course came with a beautifully prepared brochure explaining the inspiration, ingredients, and philosophy behind each dish, which made the experience even more engaging. Even the complimentary aperitif was memorable. Rather than remaining seated for the entire meal, guests are guided through different spaces, each thoughtfully designed to complement the food. From the captivating Mushroom Lab to the main dining room, then up to the rooftop spice garden where a salad is prepared with freshly picked herbs and edible flowers, every transition feels purposeful and enhances the story being told. The cuisine itself was exceptional. The creativity is extraordinary, with ingredients you would never imagine pairing together transformed into dishes that feel harmonious and exciting. Every course surprised me while remaining beautifully balanced. It’s modern gastronomy at its most imaginative, yet always delicious rather than experimental for the sake of it. The journey concludes back downstairs for desserts, surrounded once again by lush greenery, bringing the entire experience full circle in a wonderfully relaxing atmosphere. Another highlight was the beverage program. Having a knowledgeable and professional sommelier is still relatively uncommon in Bali, and it elevated the experience even further. My only “complaint” is that I almost wish the menu changed a little less frequently, simply because I’d love to revisit some of these incredible dishes. That said, I completely understand that in a tropical environment like Bali, seasonality works differently and continual evolution is part of the restaurant’s philosophy. I can’t wait to see what the next menu brings, and I’ll definitely be returning.

5* (6* ? 7* ?) dining experience. The food was fantastic but what really stood out was the entire experience from the moment we arrived until the moment we left. The service was present but not overbearing. The atmosphere was elegant and modern, not stuffy. The staff was knowledgeable and gracious, not pretentious. The night started in an elegant bar with drinks and a first course. We asked about seeing the restaurant while we waited for our table and he recommended we stay in the bar “so that none of the surprises would be spoiled”. This was some of the best advice we received on our trip. Waiting for the night to unfold was the way to go - the food, the drinks, the room, the atmosphere, the service - all above our expectations. We couldn’t recommend this more highly. Do yourself a favor and visit Locovore NXT whenever you’re near Ubud.

We had a fantastic evening at Locavore NXT. The staff welcomed us with great warmth. From the moment we arrived until we left, we felt so comfortable. All 16 courses were incredibly delicious and beautifully presented. We really appreciated changing locations during the evening, it made the whole experience more atmospheric and exciting. Our favorite place was the rooftop garden. The restaurant is beautifully decorated, and the setting is stunning with a view over rice fields. The entire experience was innovative and offered unique flavor experiences.

The Full NXT Experience is something I believe every food lover should experience at least once. If you truly care about where your food comes from and what the future of food can look like, NXT offers so much more than an exceptional meal—it offers a completely new perspective. What makes this experience so special is that it goes far beyond dinner. Staying at the accommodation and joining the foraging experience gave us a much deeper understanding of the restaurant’s philosophy and why sustainability is at the heart of everything they do. From the moment we arrived, the hospitality was impeccable. Everyone was genuinely warm and welcoming. A special thank you to Elka, who guided us through the property, our dining experience, and even the following morning. Every interaction felt thoughtful, personal, and sincere. The foraging experience with Detra was another highlight. He generously shared his knowledge while taking us through his family’s and community’s farms, where some of NXT’s ingredients are sourced. Learning about local flowers, edible plants, vegetables, insects, and the surrounding ecosystem of North Ubud gave us a completely different appreciation for the food we later enjoyed. Finishing the experience with a delicious home-cooked lunch prepared by his family made it even more memorable. Their warmth and hospitality made us feel truly at home. The tasting menu itself was extraordinary. Every course and every beverage pairing—both alcoholic and non-alcoholic—felt intentional and beautifully balanced. What amazed me most was how the chefs transformed ingredients that many people might overlook into refined, elegant dishes while staying true to their philosophy of letting the ingredients shine. You can immediately recognize the immense amount of research, creativity, craftsmanship, and respect for nature behind every plate. Having lived in the United States, I can honestly say I haven’t experienced anything quite like this. NXT isn’t simply serving incredible food; they’re rethinking how fine dining can coexist with sustainability, local communities, and responsible sourcing without compromising creativity or excellence. My husband and I left with far more than memories of an outstanding meal. We left inspired to think differently about how we source, prepare, and appreciate food in our own lives. This wasn’t just one of the best dining experiences we’ve ever had—it was an experience that genuinely changed the way we think about food. If you’re considering NXT, I highly recommend the Full NXT Experience rather than just the dinner. Dining at Locavore was much more than just a dinner, it was one of the most beautiful and memorable experiences we’ve ever had. From the very first moment, you can feel the soul of this place. The architecture, the atmosphere, the details, everything is designed to make you slow down and truly enjoy the journey. Behind every dish there is incredible research, creativity, and respect for the ingredients, but what touched us the most was the passion of the people working there. You can genuinely feel how much love and care they put into every single moment of the experience. The dinner lasted 3.5 hours, but time somehow disappeared. Every dish arrived with a story, an emotion, a surprise. The experience is so dynamic and immersive that you stay curious and excited from beginning to end, never wanting it to stop. A special mention to the mushroom dish and the prawn dish, two creations we will honestly remember for a very long time. Locavore is not simply a restaurant. It’s a place that makes you feel something. And those are the experiences that stay with you forever.

We know the earlier Locavore and we have dined & wined at Locavore pop-ups in Jakarta during Covid and it was always an experience and now the entire building adds up to the experience. Drinks in the foyer, with the most stunning hand-made Balinese door with some funny creative links to Locavore (I wont spoil it) then dinner in the main dining room with salads on the roof in the garden, and back for the mains and deserts. It was fantastic, the flavors, the way all courses looked, the textures, the ceramics. The wines. The staff, all so passionate and knowledgable, all of them, not one replied: let me ask the chef, they all know. And the best: we stayed the night! So we saw even more! As part of the stay-over package is also to be toured the grounds the next day so you see how mushrooms are grown and kombuchas are made and you get to have breakfast in the canteen. With the best jams ever, so we drove to Locavore-to-go in Ubud to buy some to bring back home.

Am I the crazy one? That's the question I've been lying in bed asking myself since dinner. Let me be clear: Locavore NXT is a 5-star experience and a 1-star meal. The architecture is stunning. The staff are gracious and plentiful. The mushroom chamber, the ingredient library, the flow through different rooms -- descending into the basement and ascending to the rooftop felt like exploring a living installation. You feel like you're touring a visionary's obsession. And you are. This is what happens when a tech founder-level zealot decides to build a restaurant. Every detail is immaculate. The vision is total. The execution of the concept is flawless. For context on my palate: I am not a picky eater. I will eat a hospital sandwich without complaint. I have loved Alinea, multiple James Beard and Michelin-starred restaurants, and authentic local warungs in equal measure. I brew my own kombucha at home. I make my own fermented vegetables and love sour pickles. I am, by any measure, exactly the target audience for this meal. And even I didn't like it. The food tasted like a thesis on fermentation. How many ways can kombucha appear in one evening? We found out. The non-alcoholic pairings were essentially a kombucha flight with garnishes. Each course arrived more aggressively fermented than the last. By the midpoint I was no longer eating dinner -- I was auditing a manifesto. My companion felt every sauce was over-engineered. The ceviche was enjoyable -- a rare moment of relief. By the sixth course I was fighting the urge to simply get up and leave. I never want to end a meal. I have never wanted to end a meal. I wanted to end this one. Food was entering my stomach but my stomach was rejecting the experience entirely. One reviewer noted she attended last year and loved it -- then returned this year with 23 friends to a completely different result. I believe her completely. I wish I had last year's menu. I haven't been to Noma, but from everything I've heard about their fermentation-forward manifesto, this felt spiritually identical -- Indonesian edition. Maybe I'm not evolved enough to appreciate it. Maybe my palate is pedestrian. Or maybe the vision outran the flavor. I genuinely cannot tell, and that uncertainty is its own kind of review. Most disappointing gap between expectation and reality I have ever experienced at a restaurant. I had to go home and lie down.
